You do want to roast the unpeeled garlic? If one has an oven?

Yes! Roast it unpeeled for better flavor, then peel and mash it once it's soft and the tomatoes are done. Hope you enjoy!

Also, with no oven, unpeeled garlic cloves can be dry roasted on a skillet over med heat, just turn occasionally until blackened and soft, maybe 10 to 15 minutes.
