I used to bake birthday cakes for our office staff birthday parties. When my birthday came around, the staff would usually buy me a nice one, or for the last birthday I was there, one staff member asked me to give her the recipe of the cake that I would like, and she baked that spice cake with caramel frosting. I cannot bake these kinds of cakes anymore, as I do not have enough people around to help eat them.
I make my own birthday cake because no one gets it right. But I cannot wait until my own birthday to make this. I am especially looking forward to the curd. I used to buy frozen passion fruit puree at a store with a lot of Hispanic products. It might have been Goya. Is that what you might have used?
