Just take your time. It’s easy if you take your time and follow the directions carefully. Even if they aren’t perfect, they’re still delicious and worth the effort.

I made it today and was my first soufflé! Turned out very good and tasty but wanting to be careful in following the recipe, it took me 2 hrs to prepare before putting in oven🤷🏻♀️

Are the French tolerating Americans living in a fascist dictatorship who come to visit? I wouldn’t. They didn’t like us too much before. Perhaps there is pity…Off to find two more ramekins. Yes, always fold in the meringue by hand - using a beater or mixer will deflate the meringue and knock all the air out that makes it fluffy.

The French love Americans. They’re very welcome ESPECIALLY now! The plates were a gift from a friend who found them at a local flea market.
