Just take your time. It’s easy if you take your time and follow the directions carefully. Even if they aren’t perfect, they’re still delicious and worth the effort.

I probably could shave off an hour. Made it for 3 friends and was given a thumbs up. One question- folding in meringue, is that done by hand? That’s what I did

Yes, always fold in the meringue by hand - using a beater or mixer will deflate the meringue and knock all the air out that makes it fluffy.

I made it today and was my first soufflé! Turned out very good and tasty but wanting to be careful in following the recipe, it took me 2 hrs to prepare before putting in oven🤷🏻‍♀️

Voilà. Lovely. What is the history of the China plate in the picture? I’ve missed two chances to go to France - 9/11 and the death of my sister in 2018. Perhaps I have another go of it. Are the French tolerating Americans living in a fascist dictatorship who come to visit? I wouldn’t. They didn’t like us too much before. Perhaps there is pity…Off to find two more ramekins. Thank you, you make it sound easy :) If you don’t see your puff pastry fall, is it really fallen?

The French love Americans. They’re very welcome ESPECIALLY now! The plates were a gift from a friend who found them at a local flea market.
