Made this twice; flavor is fantastic! But both times, the round loaves dipped in the center, no matter how thoroughly I mixed in the orange juice. I even made a 4" round one to fill in the dip, and it also was lower in the center! I've never had a cake do this. Any suggestions?
Hmmmm this is a conundrum. I’ve never had this happen. I found this online « Cakes sink in the middle due to several factors, including overmixing of the batter, opening the oven door too soon, or not baking at the right temperature. Expired leavening agents or incorrect proportions of ingredients can also cause sinking. » I would make sure that my oven temp is correct (use an oven thermometer), and that the pans are the right size (though I’ve made it in 3 smaller pans, too, without a problem. Check the date on your baking powder/soda. I don’t think it could be over mixing because it’s such a wet batter.
I shouldn’t, but I do think it is mandatory that I make this amazing cake. I blame The Contrarian and the French for any weight I will gain.

I have a chocolate brownie recipe in my cookbook too. I swirl orange marmalade through the batter before baking!

My daughter-in-law made me this for my 45th anniversary and it was fabulous. I can do resistance like this whenever it is required.
