I usually take my lentils straight up. Rice gets served with black beans or pintos. I’ll have to try this combo sometime.

I hope you do! Let me know how it turns out

I definitely will! I’m native.

Beans are their own food group!

It is commonly spiced by adding some cumin, black pepper, and/or curry powder. Let it sit for awhile to let the flavors meld. Also, the reserved onions served on the side should be cooked a little longer so they are crispy.

There are all kinds of regional variations! This is how my Syrian family makes it

As a non meat eater, I’m always on the lookout for interesting protein packed plant based meals. Lentils are one of my favorite legumes. Can’t wait to make this.

i just cooked the orange colored lentils last week, added tons if veggies and and a few slices of cooked chicken breast, have several containers frozen for next week. Time to cut back and survive.

Tis the season I'm afraid Charles! Sounds like you're ready

I never knew that caramelized onions should be done so slowly. It makes sense. Also, cooking the rice with the legumes as opposed to mixing them after cooking separately. I think I’m in for a treat. Thanks! 🙏

Why always so much salt? Very lazy because lots of flavor can be built in without it.

I'm with you. I actually never add salt to anything I cook, other than the smallest possible pinch to a few things that truly need it to work. Lotsa fine other spices.

If you want to know what our hunter-gatherer ancestors really ate, I recommend the book 'Nourishing Diets' by Sally Fallon Morell. All those paleo-diet wankers would faint at what they really ate!

Yum! Such a comforting dish.
