Well, I have been making eight salmon patties from a can of salmon for a long time. It's a lot faster, and cheaper, than buying it frozen and cutting it up. Recipe available on request and without a scientifically dubious spiel.
Marliss Desens adapted this recipe from “Salmon Cakes,” by Laura Tutor, the features editor of The Anniston Star, an Alabama paper where the recipe first appeared. These are good served warm as a protein entrée with choice of sides or on a bun with choice of fixings. (Dill Tartar Sauce is great.) I like a slice of onion on mine with mayonnaise. My husband likes catsup. The patties can be re-warmed in the microwave or eaten cold. In a cooler, they make great picnic food. The recipe can be easily adapted to your choice of seasonings.
½ cup low-fat or nonfat Greek yogurt (I use Chobani nonfat)
1/3 cup grated Parmesan cheese
1 egg
1 tsp. deli-style brown mustard or Dijon mustard
(chopped onion, or shallot, or green onion may be added; I delete for my husband)
1 tsp. Penzey’s Mural of Flavor seasoning OR seasoning of your choice
Freshly ground black pepper
1 can (14.5 oz., depending on shrinkflation) salmon, drained, and neck bones removed
1/3 cup oat bran (If desired, just use a half cup of Panko or other dry bread crumbs)
3 Tbs. Panko
In 3-qt. bowl, mix ingredients mix first six or seven ingredients. Flake the salmon into pieces and add. Mix well with large fork. Stir in oat bran and Panko.
Using a 1/3 measuring cup, scoop slightly scant mounds onto 8 pieces of waxed paper. (Using a flatter measuring cup helps with shaping.) Use fingers to flatten into patty about 3 inches in diameter.
Heat avocado oil (or any oil that works for high heat) in a non-stick skillet over medium heat. (I use a 12-inch ceramic skillet.) Invert a patty onto your hand, then put the flat side down into the pan. Cook patties, no more than three at a time, for 3 minutes on each side, with a golden color. Repeat with the remaining patties. As patties cook, put them into a container or on a plate and cover to keep warm.
What I changed: I replaced regular yogurt with Greek yogurt, which holds the patties together better and which has more protein. I use an egg rather than an egg substitute. I use Dijon mustard when I do not have deli brown mustard. The original recipe used 1 tsp. minced garlic, which is not needed with the Mural seasoning. It also noted that 1 Tbs. chives, 1 minced shallot, and 1 Tbs. parsley can be added. Choose the flavors you want! I replaced the ½ cup of Panko with the oat bran to increase nutritional density, but I still put in a bit of Panko.
So now cabinet secretaries just hit the road to produce reality TV shows. I was aghast when I heard that Transpo sec'y Sean Duffy got in his gas-powered vehicle and drove all around so he could rake in money for a miniseries on people getting in their gas-powered vehicles and taking their 9 children on the road. Sound just like the guy next door, huh? And the Usha Vance children's story hour in which no children are present. That's a good one.
Now we have a guy who surely doesn't do his own cooking telling us what to buy, cook, and eat, so he can make money he doesn't need as a big TV star. I am so sorry, Meredith, that you had to research and write this piece. I'm sorrier that any American would voluntarily watch any of these rich people get paid to lie to them.
I've actually cooked and eaten road kill, but I should explain. I was driving home from work along the expressway east of Ann Arbor when I happened to see a pheasant fly into the side of the car ahead of me. Judging by the pheasant's movements after the collision, I figured it had broken its neck, something I was familiar with having grown up on a chicken farm. Knowing that pheasant is one of the great game dishes, I stopped and I found the bird who was no longer moving. I took it home, cleaned it, roasted it and served it to one of my girlfriends (I had learned by then that the quickest route to a girl's heart was through her stomach - in those days a guy who could cook a great meal was probably thought to be a good catch himself). That was one of the best dinners ever.
Obviously, the pheasant was very fresh, unlike the bear that RFK picked up on the side of the road, so there is no comparison between him and me. Although his dad was one of my favorite pols, RFK jr. seems to not have inherited his dad's good sense. In fact, I think the worm is still hanging out in his brain. He's proven to be just another hangar on in the Trump administration where loyalty seems to be the only criteria of importance to Trump. His days are numbered though as are the days of the entire Trump administration.
I was going to mention that salmon is rather expensive on the west coast. I personally wait till the king is on sale and have with a salad. Even the frozen is a bit $$$ to turn into patties.
I’ve been reading “97 Orchard: An edible history of five immigrant families in one New York tenement” since visiting the Tenement Museum in NY a couple weeks ago. Great stories about how different immigrant groups ate nutritious affordable food, most of them at least. I wonder if Kennedy would be interested in featuring what we can all learn from immigrants on his show. Probably not.
What caught my eye here is the reference to roadkill. Clearly rfk jr hasn’t met Skink of carl hiassen infamy. Perhaps Skink would help rfk jr clarify some fundamental community, social and human(e) values for the benefit of everyone else. Including their health!
Speaking of Hiassen, did you read his latest, Fever Beach? He has a field day with maga, and the thinly veiled Matt Gaetz character is hilarious to the tenth power.

At our house we have been giving our Instant Pot a workout by cooking a lot of beans using the pressure cooker. Dried beans are still a bargain compared to other protein sources and they should be accompanied with grain. Rice prices are rising exponentially, but cornmeal is still reasonable.

yes, exactly. it's made with avocado oil which is $$$. most storebought mayonnaise is made with "toxic" seed oils.
Just as beef and beef tallow are not cheap, unless you can get the offal.
